Three years after Steve Chu, Ephrem Abebe and Nikhil Yesupriya opened Ekiben, they now have more employees than seating for their customers.
The tiny Asian fusion eatery known for its steamed bun sandwiches and rice bowls has developed an enthusiastic fan base in Fells Point and is looking to expand, Chu said last week. Chu said he wants to bring five to 10 new Ekiben locations to the Baltimore and Washington, D.C., region. If all goes according to plan, there will be at least one new Ekiben in 2020.
