How To Cook A Turkey

Thanksgiving is right around the corner, so we touch base with our resident foodie, SaschaWolhandler, for some tips on turkeys and some of the other things we’ll want to include on our holiday menu.

Acorn Squash with Stuffing

6 Acorn Squash  halved and seeded

6 to 8 cups of breadcrumbs

1 large onion chopped

2 stalks celery chopped

¼ cup of walnuts

2 sausage links ( your choice of flavor) taken out of skins and sautéed ( CAN BE ELIMINATED IF PREFERRED VEGETARIAN)

1/2 teaspoon thyme

½ teaspoon of garlic powder

Salt and pepper

½ cup of chicken stock

!/4 cup of honey

Directions:

Sautee the sausage ( taken out of casing) till cooked. Sautee in butter the onions and celery till soft. Add the breadcrumbs, the thyme, garlic, walnuts and sausage and moisten with ¼ of chicken stock ( should be moist not wet). Put some dots of butter in cavity of the acorn squash, pour some honey around edges and cavity of squash. Mound the stuffing into the squash. Bake in a 375 oven for 40 minutes until squash tender.  If stuffing getting too brown, cover with foil. Let rest and then cut in half so each squash yields 4 portions.

Savory Baked Apples

6 ( or as many needed Granny Smith Apples for guests , each apple can be cut in half after cooking toserve two guests)

Corn Bread or Corn Muffins to break into large chunks for stuffing enough for two cups

1 onion chopped

2 stalks celery

1 sausage taken out of its casing and sautéed

¼ cup chopped walnuts or pecans

1.4 cup raisins

¼ cup chickenstock

chopped apple from around the cores

¼ cup honey

2 tbs butter

Directions:

Core the apples and then run your knife around to create a large space for stuffing.  Reserve the apple for use in stuffing. Saute in butter celery, onion till soft.  Add the cornbread, sausage, walnuts, apples, raisins and some stock to moisten. Put dots of butter in the  cavity of the apple and place some honey as well in cavity and around the sides of the cavity. Fill the apples with stuffing, mounding nicely. Bake in the oven 375 degrees for 20-25 minutes till apples are soft. Can be served whole or split in two for service to two guests.
